What is it about the coconut? The green, yellow or brown nut is the ultimate symbol of paradise. Just saying the word ‘coconut’ can alter an Eskimo’s ponder from glaciers to beaches. Flaked or baked or in a classic island calypso, coconuts are a taste of the tropics, so it is appropriate that the Cayman Islands Distillery recently launched a coconut rum.

The new rum is part of the Governor’s Reserve line of rums which are available in bars and restaurants around the island. Each batch of coconut rum is carefully distilled in the Island’s first local distillery located on the water front in George Town. The facility crafts rum using an 810 litre hand hammered copper pot still. The coconut rum is then infused with a maceration of local coconuts and natural coconut flavour.

Coconut rum is a lighter and slightly sweeter version of spirit that can be best enjoyed in a pina colada, with pineapple juice or is delicious just on its own! Although it is lighter, it is 35 per cent alcohol by volume so it still packs a punch. Our visitors should know that the rum comes 1 litre bottle, perfect for a one week stay on island.

Visit the Distillery along the water front right next to Hammerheads Bar and Grill. They are open for tours and tastings six days a week (Monday through Saturday). Call ahead to book a guided tour or just stop by any time to sample the rum and have a look around.

The tours give you a chance to learn about the distillation process as well as have your bottle signed by the Master Distiller to take home as a souvenir. If you are lucky, they may ask you be a guinea pig and test out some new flavours of rum in development. Rumour has it that a Blood Orange, Triple Sec and even a Guinep flavoured rum may be in the works!
