Seared Yellow fin tuna with spiced glaze
Ingredients:
14oz fresh tuna steak
100ml sesame oil
100ml soy sauce
100ml maple syrup
10grams fresh ginger root
¼ cucumber
1 scotch bonnet pepper
1 small red onion
1 tbl spoon chopped cilantro
1 tbl spoon toasted sesame seeds
½ red capsicum pepper
Serves four
Method:
Cut tuna into ½ inch steaks sear
on each side in a smoking hot skillet until light brown.
Combine sesame oil, soy sauce and
maple syrup in a mixing bowl and whisk well
Dice fresh ginger into fine dice,
chop scotch bonnet, red onion, peppers and cucumber into fine dice (remember to
deseed and peel cucumber for best results)
Add diced spices & vegetables
to maple syrup mix and stir add chopped cilantro and toasted sesame seeds to
finish sauce
Slice seared tuna into thin slices
and dress with prepared sauce.
Can be served with plain rice or
small salad.
