Not just another sausage

I guess it’s due to my Deutsch heritage; I love a hot grilled sausage, smothered with mustard and kraut.
 
One of my most memorable recollections growing up in Germany was when my mother and a group of her friends took me to the Oktoberfest in Munich.  While the grownups sang and danced along with the polka band I gorged on bratwurst and frankfurters. I was but a child then, yet nowadays my savour still yearns for a meat and spice filled casing and brew.  Making a jaunt to Munich is out if the question (and out of my budget) so on a regular basis I make my way to the Agricultural Grounds for their weekly Market at the Grounds and there I hook up with David and Jackie Cross.
 
It’s near impossible to just walk by their booth, just one whiff of a grilled korma curried chicken sausage has my belly growling, no matter how much of a breakfast I had consumed. Sausage is David and Jackie’s specialty, and what a variety they have – breakfast sausage, bratwurst, Italian, chorizo and my favourite, hot jerk chicken.
 
From Ireland, David is a descendant of a long line of butchers and has 25 years’ experience in the meat processing industry. He served as head butcher at The Ritz-Carlton and quickly moved up the ladder to CEO, president and owner of Caribo’s Sausage Company. One might say it was quite a transition from the swanky kitchens of The Ritz-Carlton to a booth at the agricultural grounds, but for David it’s a dream come true. Caribo’s sausages are a hit with local residents who pick up their weekly supply at the market, but also at top hotels and restaurants where David and Jackie deliver. Recently added to their long list of gourmet items is Hela, the ultimate spice ketchup, for which Caribo’s is the sole distributor in the Cayman Islands.
 
Sausages, sauce... the only thing missing is a beer!
